Recipe for Roti

Facts about making bread in biblical times

 

“Now the two angels came to Sodom in the evening as Lot was sitting in the gate of Sodom.  When Lot saw them, he rose to meet them and bowed down with his face to the ground.  And he said, ‘Now behold, my lords, please turn aside into your servant’s house, and spend the night, and wash your feet; then you may rise early and go on your way.’

 

“They said however, ‘No, but we shall spend the night in the square.’  Yet he urged them strongly, so they turned aside to him and entered his house; and he prepared a feast for them, and baked unleavened bread, and they ate.” Genesis 19:1-3

 

[God speaking] “’You shall also observe the Feast of Unleavened Bread, for on this very day I brought your hosts out of the land of Egypt; therefore, you shall observe this day throughout your generations as a permanent ordinance.  In the first month on the fourteenth day of the month at evening, you shall eat unleavened bread until the twenty-first day of the month at evening. 

 

“’Seven days there shall be no leaven found in your houses; for whoever eats what is leavened, that person shall be cut off from the congregation of Israel, whether he is an alien or a native of the land.  You shall not eat anything leavened; in all your dwellings you shall eat unleavened bread.”  Exodus 12:17-20

 

“You were running well; who hindered you from obeying the truth?  This persuasion did not come from Him who calls you.  A little leaven leavens the whole lump of dough.” Galatians 5:7-9

 

In biblical times you started the bread baking adventure by gathering the grain, then grinding it yourself to make the flour!  That was a major task.  The flat bread made from the flour was a staple in daily life and hospitality.  And because leavening bread took time, this flat bread was a frequent choice because it was inexpensive, could be made easily and quickly, took few ingredients, could be stored for later, travelled well and was surprisingly tasty. 

 

I have a most surprising and wonderful friend as dear as a blood sister.  Carla introduced me to roti and made it often.  It became one of my favourite foods (and her recipe is below).  The sad news is that she has just lost her eldest brother (who loved the Lord) and she and her husband Paul are about to travel to Jamaica to be with the family.  Please remember them in your prayers.

 

Here’s Carla’s Recipe for the unleavened bread called Roti

2 cups wholewheat flour

½ teaspoon salt

2/3 cup water

2 tablespoons olive oil.

A.    Combine the flour and salt and gradually add water and stir until the dough begins to come together.  Add the oil and knead the mixture till smooth.  Then turn the dough onto a lightly floured surface and knead for about five to seven minutes until the ingredients are all mixed together and the dough is smooth and elastic but not sticky.

B.    Divide the dough into 6-10 equal-sized portions. Shape them into balls.  Roll or hand pat them out till they are about a quarter inch think round or oval shape.

C.     Heat a skillet or griddle over medium heat and brush with olive oil.  Place the bread dough ‘cake’ onto the hot surface and cook for 2-3 minutes on each side or until golden spots appear.  Enjoy!
